Obtained by carefully distilling fermented grape pomace in red berry, it rests for a short period in inactive containers before aging for twelve months in oak barrel.
Straw-yellow colour, more or less strong (it may vary from a batch to the other), a fairly intense scent with light sensations of vanilla, yeast and honey. In the palate, it is round, full-bodied but not aggressive, and shows good personality as much as an optimal drinkability.

Obtained by carefully distilling fermented grape pomace in red berry, it is aged in Allier oak barrels for over thirty months after resting in inactive containers to improve tasting softness. It has an intense straw-yellow colour, with tones that vary according the aging batch; this grappa has great scent intensity, in a perfect taste-olfactory correspondence. Sweet and light vanilla-flavoured finish. Several spiced scents can be identified: Coriander, cinnamon, with reminiscences of liquorice, chestnut honey and tobacco, light and pleasant sensation of wet hay and leather.
In the palate, it is warm and pronounced, enveloping; it reaffirms the aroma of good woods, toast, cinnamon that makes it fragrant and articulate. An optimal example of primary and tertiary aromas.
It can wash down Tuscany cigars and fondant chocolate.

The very best red Veneto marcs were selected to create this splendid grappa, and as soon as they had been packed into small sealed containers directly in the cellar they were despatched for distillation. The still was a discontinuous alembic with copper chambers operating with direct low-pressure steam. The grappa obtained was then put into wood for long state-controlled ageing. Visually it has intense golden reflections. With a rich lingering perfume, it fully reveals the characteristics of an artisan grappa and at the same time releases spicy sensations due to the wood. It is warm and pervasive on the palate, decisive but not aggressive. There is also a pleasant evolution of the taste sensations which range broadly from fruity to spicy. Well-balanced, pervasive, never brazen or sharp, but the proper marriage of original aromas and ageing, Mèmora is marvellous for accompanying a fine cigar and is also perfect with pure chocolate. Accompanying it with a mature cheese is curious and provocative.
